What actually makes Greek yogurt different?
Both products begin with a cultured dairy base. Under the current U.S. yogurt standard, yogurt uses dairy ingredients cultured with the characterizing bacteria Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus. The dairy ingredients must be pasteurized or ultra-pasteurized before those cultures are added.
The paths often separate after fermentation. Conventional yogurt may be cooled and stirred or allowed to set in its package while keeping most of its liquid phase. Traditional Greek yogurt is strained, so some serum or acid whey leaves the yogurt. What remains has a higher share of protein and other milk solids relative to water.
This more concentrated structure explains the familiar dense body and why many Greek yogurts show more protein per equal weight. It can also make the flavor feel more tangy or rich. Yet concentration is not the only way to make yogurt thick. Milk composition, heat treatment, homogenization, cultures, fat, added milk solids, protein ingredients and stabilizers can all affect texture.
Best short definition: regular yogurt is usually less concentrated, while Greek yogurt is usually a concentrated yogurt. The exact process and final nutrition still depend on the product.

Is every Greek yogurt made by straining?
No. Traditional straining is the clearest mental model, but modern high-protein products may reach a similar body through a different concentration route. FDA stated in its January 2025 request for information that the United States does not have a separate standard of identity for high-protein yogurt. The agency also asked for information about Greek and Greek-style production practices and names.
Buyer takeaway: the front word “Greek” does not document one manufacturing route. Ask the manufacturer when process origin, acid-whey handling or a clean-label goal matters.
Why can Greek yogurt cost more than regular yogurt?
Concentration changes yield. When a producer strains fermented yogurt, some water and dissolved milk components leave with the acid whey. The same starting milk therefore produces less finished strained yogurt than it would if most of that liquid stayed in the product. The plant also needs a straining or separation step, cleaning time and a plan for the by-product.
Pre-concentrating milk can change that operating picture, but it still needs membrane equipment, process control and cleaning. Research comparing milk ultrafiltration with yogurt ultrafiltration shows why two products with a similar final composition can have different process efficiency and by-product streams. The cheapest or best route cannot be selected from the product name alone.
At the store, price also reflects brand, pack size, milk source, fat level, flavor, organic positioning, mix-ins and promotions. Compare price per ounce or per 100 grams rather than comparing only the number printed on two cups. Then decide whether the thicker texture or label values are worth the difference for your use.
For home straining: plan for a smaller final volume and a safe use or disposal route for the whey. Do not treat the whey amount as a precise protein or nutrition measurement.
Does Greek yogurt always have more protein and less sugar?
It often has more protein per equal weight because concentration raises protein density. But “often” is important. A regular yogurt can contain extra milk protein. A Greek-style cup can use a smaller serving. Fruit, granola, honey, syrup and dessert mix-ins can change the comparison.
Start with serving size. FDA explains that the nutrients on a Nutrition Facts label are normally listed for one labeled serving. If two servings have different gram weights, the larger serving can show more protein simply because it contains more food.
Then separate total sugars from added sugars. Total sugars can include lactose naturally present in milk. The “Includes Added Sugars” line tells you how much sugar was added during processing. A flavored Greek yogurt may therefore have more added sugar than a plain regular yogurt even when Greek yogurt as a category is commonly described as lower in sugar.
Fat and calories also depend on the milk base and recipe. Whole-milk Greek yogurt can have more fat than a nonfat regular yogurt. The word Greek does not mean low-fat, low-calorie, low-sodium or low-sugar.

Does Greek yogurt have less lactose?
It may. Lactose is the natural sugar in milk, and some lactose leaves with the whey during traditional straining. A strained product can therefore contain less lactose than an otherwise similar unstrained yogurt. Fermentation and other formula choices also affect the final amount.
Greek yogurt is not automatically lactose free. The starting milk, degree of concentration, added dairy ingredients, lactose treatment and serving size all matter. If lactose avoidance is important, choose a product that is specifically labeled lactose free or lactose reduced in your market.
NIDDK notes that people with lactose intolerance can handle different amounts of lactose and that some people find yogurt easier to tolerate than other milk products. That does not mean every Greek yogurt is suitable for every person. Recurrent symptoms deserve individual guidance from a doctor or dietitian.
Do not confuse lactose intolerance with milk allergy. Lactose intolerance is a digestive problem. Milk allergy is an immune reaction to milk proteins and can be serious. Dairy Greek and regular yogurt both contain milk proteins unless the product is a true non-dairy alternative.

Does a watery layer mean the yogurt has gone bad?
Not by itself. The thin liquid is often whey released from the yogurt gel. The technical term is syneresis. Formula, protein structure, stirring, vibration, storage time and temperature changes can all affect how much liquid appears.
Greek yogurt often holds water well because its structure is concentrated, but it can still separate. Regular yogurt can also remain smooth and stable. A small whey layer is therefore a quality observation, not proof of contamination and not proof that one category was poorly made.
Use the full context. Follow the storage directions, keep the product at 40°F (4°C) or below, and check the package. Discard yogurt that has mold, leakage, an obviously damaged seal or another clear spoilage concern. Do not taste questionable food to decide whether it is safe.
Safety boundary: normal appearance and smell cannot prove safety after a known or unknown cold-chain failure. Thick yogurt and an intact lid do not reverse temperature abuse.

Why does Greek yogurt create different packaging questions?
Packaging does not make a yogurt Greek. It must support the finished yogurt that the process creates. High viscosity can affect pumping, nozzle cutoff, fill weight, headspace and rim cleanliness. A tall fill peak or yogurt on the sealing land can challenge lidding even when the empty cup and film look compatible.
Water-holding behavior also matters. A brand may set a visual target for serum separation, but that target must be tested after storage, stacking, vibration and temperature cycling in the real package. A clean water fill cannot represent a thick yogurt or a fruit preparation.
The package is a connected system: cup or tub, rim geometry, lidding film, seal layer, optional snap lid, decoration, code, outer case and cold chain. Food-contact suitability also depends on the relevant components and intended use. A resin acronym or a generic “food-grade” statement does not complete the review.
Before approval, run production-equivalent trials with the final formula, actual fill temperature, line speed and expected rim condition. Define seal, peel, leakage, opening, appearance and distribution criteria before the test. Shelf life must be validated with the finished yogurt and finished pack together.
